Grilled Beef Tenderloin w/Garlic Tomatoes

Ingredients:
  • (1 tsp.) canola oil
  • (1 Tbsp.) shallots, finely chopped
  • (1 tsp.) minced garlic, divided
  • (3/4 cup) tomato, finely chopped
  • (2 Tbsp.) water
  • (1 Tbsp.) white balsamic vinegar
  • (1/8 tsp.) salt
  • (1/4 tsp.) freshly ground pepper, divided
  • (1 tsp.) fresh rosemary, minced
  • (1/4 tsp.) salt
  • (2 4-oz.) beef tenderloin steaks, trimmed

Grilled Beef Tenderloin w/Garlic Tomatoes

Beef tenderloin steaks topped with a garlic rosemary paste and served with stewed garlic tomatoes.

    Instructions

  1. 1Preheat grill to medium-high. Spray with cooking spray.
  2. 2Place a small nonstick skillet over medium heat. Add oil. When hot, add shallots and cook 3 minutes, stirring once or twice. Add 1/2 tsp. garlic and stir another minute.

  3. 3Stir in tomato, 2 Tbsp. water, vinegar and 1/8 tsp. salt. Bring to a boil, then simmer on medium-low 12 minutes. Add 1/8 tsp. pepper and keep over low heat.

  4. 4In a small bowl, stir together 1/2 tsp. garlic, 1/8 tsp. pepper, rosemary and 1/4 tsp. salt, set aside.
  5. 5Grill steaks 3 minutes and flip. Evenly distribute rosemary mixture over top and grill another 3 minutes, or longer depending on preference. Top with warm tomatoes and serve.
