  • (2 lb.) boneless, skinless chicken thighs, each quartered
  • (1 medium) yellow onion, coarsely chopped
  • (1 large) red bell pepper, coarsely chopped
  • (1 cup) white mushrooms, halved
  • (28 oz. can) crushed tomatoes
  • (6 oz. can) tomato paste
  • (1 cup) reduced-sodium chicken broth
  • (1/2 cup) red wine
  • (3 cloves) garlic, minced
  • (1) bay leaf
  • (2 Tbsp.) fresh parsley (or 2 tsp. dried)
  • (2 tsp.) salt-free Italian seasoning
  • (1/2 tsp.) salt
  • (1/2 tsp.) freshly ground black pepper
  • (12 oz.) rotini or linguine pasta

Chicken Cacciatore

Chicken and mushrooms slow-cooked with tomatoes and herbs, then served over your choice of pasta.

  1. 1In a large slow cooker, combine chicken, onion, bell pepper, mushrooms, crushed tomatoes, tomato paste, broth, wine, garlic, bay leaf, parsley, seasoning, salt, and black pepper.

  2. 2Cover, cook on High 3 hours. Take the lid off and cook another hour.
  3. 3About 1/2 hour before serving, fill a large pot with 4 quarts cold water and place over High heat. When boiling, add pasta and cook according to package. Drain.

  4. 4Discard bay leaf. Pour chicken and sauce over pasta and serve.
