Cajun Jambalaya

Ingredients:
  • (1 tsp.) olive oil
  • (2 oz.) turkey kielbasa, halved lengthwise and sliced
  • (1/2 cup) onion, minced
  • (1/2 cup) green bell pepper, diced
  • (1/2 cup) long-grain rice, uncooked
  • (1/8 tsp.) salt
  • (1/8 tsp.) dried thyme
  • (1/8 tsp.) black pepper
  • (1/8 tsp.) ground red pepper
  • (1 cup) water
  • (10.5 oz.) can low-sodium chicken broth
  • (14.5 oz.) can no-sodium diced tomato, undrained
  • (1/2 lb.) medium shrimp, peeled
  • (1/8 tsp.) hot sauce
  • (1 tsp.) fresh parsley, chopped

Cajun Jambalaya

A cajun flavored shrimp jambalaya with kielbasa, rice and veggies.

    Instructions

  1. 1Heat oil in a large saucepan over medium heat.
  2. 2Add kielbasa, onion and bell pepper and saute for 5 minutes.
  3. 3Add rice, saute 2 minutes. Add salt, black pepper, thyme and ground red pepper, saute another minute.
  4. 4Add water, broth and tomatoes, bring to a boil.
  5. 5Cover, lower heat and simmer for 15 minutes.
  6. 6Stir in shrimp and hot sauce. Cook 5 minutes.
  7. 7Remove from heat and stir in parsley. Enjoy!
