Balsamic Tilapia w/Mixed Greens

  • (1 Tbsp.) balsamic vinegar
  • (1 Tbsp.) orange juice
  • (1 Tbsp.) fresh basil, thinly sliced
  • (1 tsp.) Dijon mustard
  • (1/2 tsp.) salt
  • (1/4 tsp.) ground black pepper
  • (4 Tbsp.) extra-virgin olive oil, divided
  • (4) tilapia fillets (6 oz. each)
  • (4 cups) mixed baby greens

Balsamic Tilapia w/Mixed Greens

Simple grilled tilapia served with a mixed baby green salad and a homemade balsamic vinaigrette dressing.

  1. 1Spray grill rack with cooking spray and preheat grill to medium-high.
  2. 2In a small bowl, whisk together vinegar, orange juice, basil, mustard, 1/4 tsp. salt and 1/8 tsp. pepper. While whisking, slowly stream in 3 Tbsp. oil, set aside.

  3. 3Use 1 Tbsp. oil to brush each side of tilapia fillets. Top with 1/4 tsp. salt and 1/8 tsp. pepper. Grill 7-8 minutes, turning once halfway through. Serve with greens and vinaigrette.
