Apple Cider Walnut Chicken

  • (1/2 cup) walnuts, chopped
  • (2 tsp.) canola oil
  • (4) boneless, skinless chicken breast halves
  • (1 Tbsp.) all-purpose flour
  • (1) Granny Smith apple, unpeeled, quartered and sliced
  • (1 small) red onion, quartered and sliced
  • (1/4 tsp.) salt
  • (1/4 tsp.) ground black pepper
  • (1/2 cup) apple cider

Apple Cider Walnut Chicken

Boneless, skinless chicken breasts pan-seared and coated with a chunky apple pan sauce and toasted walnuts.

  1. 1Place a large, nonstick skillet over medium-high heat. Add walnuts, toast 3-5 minutes, shaking the pan frequently, set aside.
  2. 2Place skillet back over heat, add oil. Sprinkle both sides of chicken with flour, cook 4-5 minutes on each side or until cooked through, set aside.
  3. 3Place skillet back over heat, add apple, onion, salt and pepper. Cook 2 minutes, tossing frequently. Add cider, bring to a boil, then simmer 4 minutes (cider should be half reduced).

  4. 4Place chicken (w/juices) back in skillet, coat with sauce. Serve each chicken breast with apple mixture and 2 Tbsp. walnuts.
