Ingredients:
  • (1) Roma tomato, chopped
  • (1 1/2 cups) fresh green beans, cut into 1/2 in. pieces
  • (1) cucumber, cut into 1/2 in. cubes
  • (1 1/2 cups) papaya, cubed
  • (2 cloves) garlic, minced
  • (1) fresh Thai or Serrano chile, finely minced
  • (1) lemon, juiced
  • (2) limes, juiced
  • (2 Tbsp.) fish sauce
  • (1 Tbsp.) white sugar
  • (1/2 cup) roasted peanuts, chopped
  • (1/4 cup) cilantro leaves, chopped

Thai Vegetable Salad

Chopped tomatoes, fresh green beans, cucumber and papaya in a sweet citrus dressing, served with roasted peanuts.

    Instructions

  1. 1In a large bowl, whisk together lemon juice, lime juice, fish sauce and sugar. Toss in tomato, beans, cucumber and papaya, garlic and chile pepper. Serve with peanuts and cilantro.
