Chilled Whole Wheat Couscous Salad

Ingredients:
  • (1 1/4 cups) reduced-sodium chicken broth
  • (1 small) zucchini, coarsely chopped
  • (2 tsp.) green curry paste
  • (1/4 tsp.) freshly ground black pepper
  • (1 cup) whole wheat couscous
  • (1/3 cup) dried apricots, chopped
  • (3 Tbsp.) golden raisins
  • (3 Tbsp.) slivered almonds
  • (15-16 oz. can) small pink beans, chili beans, or red kidney beans, rinsed and drained
  • (1 large) tomato, chopped
  • (1/2 cup) fresh flat-leaf parsley, coarsely chopped
  • (1/4 cup) red onion, chopped
  • (1/4 cup) lime juice
  • (2 Tbsp.) olive oil

Chilled Whole Wheat Couscous Salad

A fluffy couscous salad with dried fruit, beans and tomatoes in a fresh lime dressing.

    Instructions

  1. 1Place a medium saucepan over High heat. Add broth, zucchini, curry paste and pepper. Cover, bring to a boil. Once boiling, add couscous, apricots and raisins, stir to combine. Take off heat, set aside 10 minutes.

  2. 2Place a small, nonstick skillet over medium heat. Add almonds and toast 3-4 minutes, tossing frequently. Set aside to cool.
  3. 3Pour couscous into a large bowl, fluff, cover and set aside 20 minutes to cool. Stir in beans, tomato, parsley, red onion, lime juice and oil.
  4. 4Cover and refrigerate 30 minutes. Stir in almonds and serve.
