Chilled Whole Wheat Couscous Salad
Ingredients:
- (1 1/4 cups) reduced-sodium chicken broth
- (1 small) zucchini, coarsely chopped
- (2 tsp.) green curry paste
- (1/4 tsp.) freshly ground black pepper
- (1 cup) whole wheat couscous
- (1/3 cup) dried apricots, chopped
- (3 Tbsp.) golden raisins
- (3 Tbsp.) slivered almonds
- (15-16 oz. can) small pink beans, chili beans, or red kidney beans, rinsed and drained
- (1 large) tomato, chopped
- (1/2 cup) fresh flat-leaf parsley, coarsely chopped
- (1/4 cup) red onion, chopped
- (1/4 cup) lime juice
- (2 Tbsp.) olive oil

Instructions
- 1Place a medium saucepan over High heat. Add broth, zucchini, curry paste and pepper. Cover, bring to a boil. Once boiling, add couscous, apricots and raisins, stir to combine. Take off heat, set aside 10 minutes.
- 2Place a small, nonstick skillet over medium heat. Add almonds and toast 3-4 minutes, tossing frequently. Set
aside to cool.
- 3Pour couscous into a large bowl, fluff, cover and set aside 20 minutes to cool. Stir in beans, tomato, parsley, red onion, lime juice and oil.
- 4Cover and refrigerate 30 minutes. Stir in almonds and serve.
