Pair of Potatoes Salad

Ingredients:
  • (2) sweet potatoes, peeled and cut into 3/4 in. cubes
  • (2) potatoes, peeled and cut into 3/4 in. cubes
  • (2 tsp.) distilled white vinegar
  • (1/4 cup) light mayonnaise
  • (1/4 cup) light sour cream
  • (2 tsp.) fresh lemon juice
  • (1 tsp.) curry powder, or to taste
  • Salt and ground black pepper to taste
  • (1/4 cup) green onions, chopped
  • (1/2 cup) celery, chopped
  • (1 Tbsp.) fresh cilantro, chopped

Pair of Potatoes Salad

A delicious combination of sweet and white potatoes in a creamy dressing with crunchy celery and green onions.

About 25 minutes (plus 1 hr chilling)
Cook Time
About 15 minutes

    Instructions

  1. 1Place sweet potatoes in a small saucepan and cover with water. Do the same with the white potatoes in a separate small saucepan. Place both over High heat. When boiling, reduce heat to medium-low.

  2. 2Cook sweet 12-14 minutes and white 10-12 minutes. Drain both and combine with vinegar in a large bowl.
  3. 3In a small bowl, whisk together mayonnaise, sour cream, lemon juice and curry powder. Add salt and pepper as needed.
  4. 4Add green onions, celery, cilantro and dressing to potatoes, toss to combine. Refrigerate at least 1 hour and serve.
