Creamy Caesar Salad

  • (4 oz.) Italian bread
  • (1 clove) garlic, cut in half
  • Nonstick olive oil cooking spray
  • (1/4 cup) light mayonnaise
  • (1/4 cup) freshly grated Parmesan cheese
  • (3 Tbsp.) fresh lemon juice
  • (1 Tbsp.) olive oil
  • (1 tsp.) anchovy paste
  • Coarsely ground black pepper
  • (18 oz. package) hearts of romaine lettuce, torn into bite-size pieces

Creamy Caesar Salad

A traditional caesar salad with romaine lettuce, Parmesan cheese and crispy croutons.

  1. 1Preheat oven to 400°F. Set out a jelly-roll pan.
  2. 2Use a serrated knife to cut the bread into 1/2 in. slices. Rub both sides of each slice with the cut garlic, then cut each slice into 1/2 in. cubes.
  3. 3Place in pan, generously spray with cooking spray. Bake 10 minutes, or until crisp. Set aside to cool.
  4. 4In a large bowl, whisk together mayonnaise, Parmesan, lemon juice, olive oil, anchovy paste and 1/2 tsp. pepper. Toss lettuce and croutons with dressing, serve.
