  • (2 Tbsp.) hot sauce
  • (3 Tbsp.) white vinegar, divided
  • (1 lb.) boneless, skinless chicken breasts
  • (2 tsp.) extra-virgin olive oil
  • (2 Tbsp.) reduced-fat mayonnaise
  • (2 Tbsp.) nonfat plain yogurt
  • Freshly ground pepper
  • (1/4 cup) crumbled blue cheese
  • (4 cups) shredded romaine lettuce
  • (1 large) tomato, diced
  • (1 cup) sliced celery

Buffalo Chicken Salad

Lean chicken tossed in a spicy buffalo sauce and served over romaine lettuce with a cool blue cheese dressing and celery.

  1. 1Place a large, non-stick skillet with oil over medium-high heat. Chop the chicken breasts into bite size pieces, add to skillet. Cook 6-8 minutes, flipping halfway through.

  2. 2In a medium bowl, whisk together hot sauce and 2 Tbsp. vinegar. Toss chicken in sauce, coating thoroughly.
  3. 3In a separate bowl, whisk together mayo, yogurt, remaining vinegar and a dash of pepper. Add blue cheese, stirring to combine.
  4. 4Separate lettuce into four portions. Top with 1/4 of chicken, 1 Tbsp. dressing, tomato and celery. Mix and enjoy!
