Sausage and Tomato Penne Pasta Salad

Ingredients:
  • (1/2 tsp.) Salt
  • (4 cups) dry, thin penne pasta
  • (12 oz.) frozen sugar snap peas
  • (3 links) Tofurky® Sweet Italian Soy Sausage by Turtle Island Foods, sliced
  • (1/3 cup to 1/2 cup) julienne-cut sun-dried tomatoes (soaked and/or drained)
  • (3 Tbsp.) extra-virgin olive oil
  • (2-3 tsp.) garlic, minced
  • (1/4 cup) fat-free half-and-half
  • (2 Tbsp.) bottled marinara or tomato sauce
  • (2 Tbsp.) nonfat sour cream (or use soy alternative sour cream)
  • (1 tsp.) dried basil leaves
  • (1 tsp.) dried oregano leaves
  • Salt and freshly ground pepper

Sausage and Tomato Penne Pasta Salad

A meaty, satisfying penne pasta salad with turkey soy sausage, sugar snap peas and sun-dried tomatoes.

    Instructions

  1. 1Fill a large saucepan with 5 quarts cold water and salt, place over high heat to boil. When boiling, add pasta and cook about 12 minutes, stirring every few minutes.

  2. 2Add frozen peas, cook another 1-2 minutes, drain and transfer to a large bowl.
  3. 3Meanwhile, spray a large nonstick frying pan with cooking spray and place over medium-high heat. Add sausage and cook until browned. Remove from heat and cool.

  4. 4Add olive oil, garlic, half-and-half, marinara sauce, sour cream, basil and oregano to a food processor, puree until smooth.
  5. 5Add to pasta, along with cooled sausage and tomatoes, toss to combine. Add salt and pepper, if needed. Serve at room temperature or chilled, enjoy!
