Ingredients:
  • (15 oz. can) chickpeas or garbanzo beans, drained and rinsed
  • (1) cucumber, unpeeled and finely chopped
  • (1 cup) grape tomatoes, halved
  • (1/4 cup) red onion, finely chopped
  • (2 tsp.) fresh garlic, minced
  • (1 1/2 Tbsp.) fresh parsley, finely chopped
  • (2 Tbsp.) fresh basil, finely chopped
  • (4 oz.) fresh mozzarella, finely diced or cubed
  • (1 Tbsp.) olive oil
  • (2 Tbsp.) balsamic vinegar
  • (1/4 tsp.) salt

Chickpea and Cucumber Salad

Hearty chickpeas, fresh cucumber, grape tomatoes and mozzarella tossed with herbs and a simple dressing.

    Instructions

  1. 1In a medium serving bowl, toss together all ingredients. Cover and refrigerate at least 1 hour, up to overnight. Serve and enjoy!
