Honey Dijon Spinach Salad

Ingredients:
  • (2 cups) Roma tomatoes, chopped
  • (1) red or yellow bell pepper, seeded and finely chopped
  • (15 oz. can) red kidney beans, rinsed and drained (1 3/4 cups)
  • (6) green onions, sliced or chopped
  • (6 oz.) artichoke hearts, bottled in water
  • (2 1/4 oz. can) ripe olives, sliced and drained (optional)
  • (1 cup) fresh basil leaves, washed, patted dry (tear large leaves in half)
  • (10 cups) fresh spinach leaves, washed, patted dry (tear large leaves in half)
  • (1/4 cup) balsamic vinegar or red wine vinegar
  • (1 Tbsp.) honey
  • (2 Tbsp.) low fat or light mayonnaise
  • (1 1/2 tsp.) Dijon-style mustard
  • (1 Tbsp.) olive oil
  • (1/2 tsp.) pepper
  • (1 large or 2 small cloves) garlic, pressed or minced
  • (3 Tbsp.) grated parmesan cheese
  • (5 strips) Louis Rich® Less Fat Turkey Bacon, cooked over low heat until crisp, then crumbled

Honey Dijon Spinach Salad

A chilled vegetable salad with basil, spinach, Parmesan cheese and crumbled turkey bacon.

    Instructions

  1. 1In a large bowl, combine tomatoes, bell pepper, beans, onions, artichoke hearts, and olives. Set aside in fridge.
  2. 2In a small bowl, whisk together balsamic vinegar, honey, mayonnaise, mustard, olive oil, pepper and garlic, set aside.
  3. 3Before serving, remove tomato mixture from fridge and add basil and spinach. Toss with dressing. Top with parmesan cheese and turkey bacon.
