Raspberry-Dijon Pear and Pecan Salad

  • (1 tsp.) butter
  • (1/2 cup) chopped pecans
  • (1 1/4 tsp.) sugar
  • (1/4 tsp.) ground cinnamon
  • (1 cup) pomegranate seeds, divided
  • (1/2 cup) raspberry vinegar
  • (1 Tbsp.) Dijon mustard
  • (1 Tbsp.) honey
  • (1/4 tsp.) salt
  • (1/8 tsp.) pepper
  • (1 cup) Crisco┬« Olive Oil
  • (1 large) pear, thinly sliced
  • (1 tsp.) lemon juice
  • (3 5-oz. packages) spring mix salad greens
  • (1/2 cup) crumbled blue cheese

Raspberry-Dijon Pear and Pecan Salad

Toasted cinnamon-sugar pecans add sweetness to this savory pear and blue cheese salad.

  1. 1Place a small skillet over medium heat. Add butter. When melted, add pecans and cook 4 minutes, or until toasted. Add sugar and cinnamon, stir another 4-5 minutes. Set aside on a sheet of foil.

  2. 2Process 1/2 cup pomegranate seeds, vinegar, mustard, honey, salt and pepper in a blender until smooth. While blending, slowly stream in olive oil through food chute.

  3. 3In a large bowl, toss pears with lemon juice. Add greens, blue cheese, pecans and dressing. Toss and serve with rest of pomegranate seeds on top.
