Ingredients:
  • (1/4 cup) cider vinegar
  • (1 1/2 Tbsp.) mild-flavored honey
  • (1 Tbsp.) canola oil
  • (2 tsp.) minced onion
  • (1-1 1/2 tsp.) mild-to-medium-hot New Mexican red chile powder, plus more for garnish
  • (1/4 tsp.) salt
  • (2 cups) jícama, peeled and diced
  • (1 medium) English cucumber, peeled, seeded and diced
  • (2 Tbsp.) fresh mint, chopped

Sweet and Sour Jicama Salad

An easy, sweet jicama salad with cucumber and mint in a sour and spicy dressing.

    Instructions

  1. 1In a blender, combine vinegar, honey, oil, onion, chile powder and salt. Puree until smooth, pour into a large bowl. Toss in jicama, cucumber and mint. Refrigerate 30 minutes.

  2. 2Serve with extra chile powder, if desired.
