Balsamic Pork Spinach Salad

  • (1 lb.) peppercorn-flavored pork tenderloin, trimmed
  • (3) nectarines, halved
  • (2 6 oz. packages) fresh baby spinach
  • (1/4 cup) light balsamic vinaigrette
  • (1/4 cup) crumbled feta cheese
  • Freshly ground black pepper, optional

Balsamic Pork Spinach Salad

Grilled pork tenderloin and nectarines served over a simple balsamic spinach salad with salty feta cheese.

  1. 1Spray grill with cooking spray and preheat grill to medium-high.
  2. 2Butterfly each pork tenderloin. Grill pork and nectarines about 5 minutes per side, flipping once. Set pork aside to cool, slice nectarines.
  3. 3In a large bowl, toss spinach and balsamic. When cool, slice pork thin. Top salad with nectarines, pork, cheese and pepper, serve.
