French lentils simmered with garlic and bay leaves then tossed with carrot and parsley in a simple dressing.

Instructions
1Place a medium pot over medium-high heat. Add lentils, broth, bay leaves and garlic. Once boiling, cover and simmer on medium 25-30 minutes.
2Drain, remove garlic and bay leaves (reserve garlic, discard bay leaves). Pour lentils onto a baking sheet to cool.
3In a large bowl, whisk together oil, vinegar, salt, pepper and garlic, mashing up the garlic with the whisk. Toss in cooled lentils, carrot and parsley.
4Sprinkle both sides of cheese with coriander and place on a microwave-safe plate. Microwave on medium 30 seconds. Serve with salad.
