Ingredients:
  • (1/4 cup) red wine vinegar
  • (2 Tbsp.) extra virgin olive oil
  • (1 Tbsp.) fresh lemon juice
  • (2 tsp.) Dijon mustard
  • (1/2 tsp.) salt
  • (1/4 tsp.) freshly ground black pepper
  • (2 cloves) garlic, minced
  • (2 cups) boneless, skinless rotisserie chicken, coarsely chopped
  • (1 cup) tomato, chopped
  • (1/2 cup) red onion, thinly sliced
  • (1/3 cup) fresh basil, sliced
  • (2 16-oz. cans) cannellini beans, rinsed and drained

Tangy White Bean Salad

A hearty chicken and white bean salad with tomatoes and basil in a lemon mustard vinaigrette.

    Instructions

  1. 1In a large bowl, whisk together vinegar, olive oil, lemon juice, mustard, salt, pepper and garlic. Add chicken, tomato, red onion, basil and beans, toss to combine. Serve at room temperature.
