Mediterranean Pasta Salad

  • (16 oz.) whole grain rotini pasta
  • (1/4 cup) feta cheese
  • (8 oz.) asparagus spears (about 16 stalks)
  • (16 oz.) artichoke hearts (about 12 pieces)
  • (4 oz.) snap peas
  • (1) medium yellow bell pepper
  • (1 cup) Kalamata olives
  • (1/4 cup) red onions
  • (1/8 cup) extra-virgin olive oil
  • (3 Tbsp.) balsamic vinegar
  • (3 Tbsp.) red wine vinegar
  • (1 clove) garlic, crushed
  • Black pepper and kosher salt

Mediterranean Pasta Salad

A Mediterranean style pasta salad made with tons of veggies and chunks of feta cheese.

  1. 1Bring 6 quarts of water to a boil over high heat. When water boils, add pasta and cook for about 9 minutes, or as directed on package.
  2. 2Meanwhile, steam asparagus for about 5 minutes.
  3. 3Drain pasta, then combine it with the asparagus, feta cheese and other chopped vegetables in a large bowl.
  4. 4In a separate bowl, mix red wine vinegar, balsamic vinegar and crushed garlic. Slowly stream in the olive oil while whisking to make the dressing.
  5. 5Mix dressing into salad and serve.
