Blueberry Steak Spinach Salad

Ingredients:
  • (1 cup) fresh blueberries, divided
  • (1/2 cup) walnuts, toasted and chopped
  • (3 Tbsp.) fruity vinegar, such as raspberry vinegar
  • (1 Tbsp.) shallot, minced
  • (1 tsp.) sugar
  • (1/2 tsp.) salt, divided
  • (3 Tbsp.) walnut oil or canola oil
  • (1 lb.) sirloin steak or strip steak (1-1 1/4 in. thick), trimmed
  • (1/2 tsp.) freshly ground pepper
  • (8 cups) baby spinach
  • (1/4 cup) crumbled feta cheese

Blueberry Steak Spinach Salad

Grilled sirloin steak served over spinach with feta cheese, plump blueberries and crunchy walnuts in a fruity blueberry dressing.

    Instructions

  1. 1Preheat outdoor grill or indoor grill pan to medium heat.
  2. 2In a food processor, add 1/4 cup blueberries, 1/4 cup walnuts, vinegar, shallot, sugar and 1/4 teaspoon salt. Pulse until a paste forms, then add the oil through the food chute with the processor running, set aside.

  3. 3Season both sides of steak with pepper and rest of salt. Dip a small cloth in olive oil and grease the grill rack.
  4. 4Place steak on grill, cook 10-12 minutes or to desired done-ness, flipping halfway through. Transfer to cutting board and let rest 5 minutes.

  5. 5Meanwhile, toss spinach with dressing and portion out. Slice the steak crosswise and place it on the salad. Top with feta cheese, blueberries and walnuts, serve.
