California Pasta Salad

  • (3 Tbsp.) light mayonnaise
  • (3 Tbsp.) fat-free sour cream
  • (1 Tbsp.) fat-free half-and-half or low-fat milk
  • (1 1/2 tsp.) sugar
  • (1/4 tsp.) salt (optional)
  • Ground black pepper
  • Ground nutmeg
  • (2 cups) cooked whole-wheat blend pasta, cooled
  • (1 cup) roasted, skinless chicken breast meat, cooled and cubed
  • (2 stalks) celery, finely diced
  • (1 large) apple, peeled, cored and chopped
  • (1/2 cup) mandarin oranges, halved
  • (6 oz. can) pineapple tidbits (in juice), drained

California Pasta Salad

A whole-wheat pasta salad with chicken and fresh fruit in a sweet and creamy dressing.

  1. 1In a small bowl, whisk together mayonnaise, sour cream, half-and-half, sugar, salt, a pinch of pepper and a pinch of nutmeg; set aside.
  2. 2In a large bowl, toss together pasta, chicken, celery, apples, grapes and pineapple. Add dressing, toss to coat. Serve at room temperature or chilled, enjoy!
