Chicken Bacon Salad w/Homemade Croutons

Ingredients:
  • (4 slices) lean turkey bacon
  • (4 1-in. thick slices) ciabatta bread
  • (2 tsp.) olive oil
  • (1 clove) garlic, halved
  • (1/3 cup) low-fat buttermilk
  • (2 Tbsp.) light mayonnaise
  • (2 tsp.) cider vinegar
  • (1/4 tsp.) Dijon mustard
  • (1/4 tsp.) minced garlic
  • (1/4 tsp.) salt
  • (1/8 tsp.) sugar
  • (1/8 tsp.) freshly ground black pepper
  • (4 cups) tightly packed chopped romaine lettuce
  • (1 pint) grape tomatoes, halved
  • (2 cups) rotisserie chicken, skin removed and roughly torn

Chicken Bacon Salad w/Homemade Croutons

Torn chicken and crispy bacon served over romaine lettuce with grilled ciabatta croutons and buttermilk dressing.

    Instructions

  1. 1Place a large skillet over medium-low heat. Add bacon, cook 6 minutes or until crispy, turning occasionally.
  2. 2Meanwhile, heat outdoor grill or indoor grill pan to medium-high heat. Brush both sides of ciabatta slices with olive oil, grill 4 minutes until toasted, turning halfway through.

  3. 3Remove from grill and rub each side with garlic halves. Set aside to cool. Place bacon on a plate lined with paper towels, let cool.
  4. 4Whisk together buttermilk, mayonnaise, vinegar, mustard, minced garlic, salt, sugar and black pepper in a large bowl. Crumble bacon and add half of it to the bowl along with the lettuce, tomatoes and chicken.

  5. 5Cut bread into 1 in. cubes and toss with salad. Serve with rest of bacon on top. Enjoy!
