Instructions
1Fill a large pot with 2 quarts cold water and place over High heat. When boiling, add noodles and cook 7 minutes. Add soybeans, cook another minute. Drain, transfer to a large
bowl.
2Meanwhile, spray a large skillet with cooking spray and place over medium-high heat. Season shrimp with salt and pepper. Cook shrimp 3 minutes, turning once.
3Toss carrots, onions, cilantro, chile and shrimp with noodle mixture.
4Whisk together orange juice, lime juice, soy sauce, sesame oil and olive oil, pour over noodles, toss and
serve.
