Island Fruit Salad

  • (20 oz. can) pineapple chunks (canned in juice)
  • (2) kiwi, peeled, halved and sliced
  • (2 cups) strawberries, quartered
  • (1 large) banana, sliced
  • (1) papaya or mango, peeled and cubed (or an 11 oz. can mandarin oranges, drained)
  • (1/2 tsp.) finely grated lime zest
  • (2 Tbsp.) lime juice
  • (1 1/2 Tbsp.) honey
  • (1/3 cup) unsweetened shredded coconut (optional)

Island Fruit Salad

Pineapple chunks, kiwi, strawberries, banana and papaya in a sweet pineapple-lime dressing.

  1. 1Pour 1/4 cup pineapple juice into a small bowl, drain rest.
  2. 2In a large bowl, whisk together pineapple juice, lime zest, lime juice and honey. Add pineapple chunks, kiwi, strawberries, banana and papaya, toss to coat. Serve with coconut if desired.
