Cranberry Pecan Quinoa and Spinach Salad

Ingredients:
  • (2 cups) water
  • (1 cup) quinoa, rinsed
  • (6 oz. package) fresh baby spinach, torn
  • (1/2 cup) dried cranberries
  • (3 Tbsp.) olive oil
  • (2 Tbsp.) orange juice
  • (1 Tbsp.) red wine vinegar
  • (1 Tbsp.) maple syrup
  • (1 clove) garlic, minced
  • (1/2 tsp.) salt
  • (1/8 tsp.) pepper
  • (1) green onion, finely chopped
  • (1/2 cup) pecans, chopped and toasted

Cranberry Pecan Quinoa and Spinach Salad

A sweet spinach salad with tart dried cranberries, tender quinoa and toasted pecans.

    Instructions

  1. 1Place water in a small saucepan and place over High heat. When boiling, add quinoa. Cover and simmer 12-15 minutes over medium-high heat. Take off heat, fluff.

  2. 2In a large bowl, whisk together oil, orange juice, vinegar, maple syrup, garlic, salt pepper and onion. Toss in quinoa, spinach and cranberries. Top with pecans and serve.
