Sesame Noodle Salad

  • (1 lb.) whole-wheat spaghetti
  • (1/2 cup) reduced-sodium soy sauce
  • (2 Tbsp.) sesame oil
  • (2 Tbsp.) canola oil
  • (2 Tbsp.) rice-wine vinegar, or lime juice
  • (1 1/2 tsp.) crushed red pepper
  • (1 bunch) scallions, sliced, divided
  • (1/4 cup) fresh cilantro, chopped, divided (optional)
  • (4 cups) snow peas, trimmed and sliced on the bias
  • (1 medium) red bell pepper, thinly sliced
  • (1/2 cup) sesame seeds, toasted

Sesame Noodle Salad

Whole-wheat spaghetti tossed in a sesame soy dressing with snow peas and red bell pepper.

  1. 1Fill a large pot with 6 quarts cold water and place over High heat to boil. When boiling, add pasta and cook 9-11 minutes. Drain and place under cold running water until completely cool.

  2. 2In a large bowl, whisk together soy sauce, sesame oil, canola oil, vinegar, red pepper, 1/4 cup scallions and 2 Tbsp. cilantro. Toss in the cooled noodles, snow peas and bell pepper.

  3. 3Serve with sesame seeds, scallions and cilantro on top.
