Sweet and Tangy Macaroni Salad
Ingredients:
- (2 1/2 cups) elbow macaroni
- (1 Tbsp.) Dijon-style mustard
- (2 tsp.) apple cider vinegar
- (1 Tbsp.) canola oil
- (1 tsp.) white pepper
- (1 Tbsp.) white sugar
- (1 cup) cherry-flavored yogurt
- Salt and pepper to taste
- (1 medium) red or green bell pepper, chopped
- (1 medium) onion, diced
- (2) carrots, peeled and finely chopped
- (1 cup) pineapple chunks, drained, 2 Tbsp. of juice
reserved
- (3 cups) cabbage, finely shredded
- (1/2 tsp.) garlic powder
- (1/2 cup) fresh shredded coconut
- (8) maraschino cherries, optional

Instructions
- 1Fill a large pot with 2 quarts cold water and place over High heat. When boiling, add macaroni and cook 8-10 minutes. Drain, place under cold running water until cooled, drain
again.
- 2In a large bowl, whisk together Dijon mustard, vinegar, oil, white pepper, sugar and yogurt. Add salt and pepper as needed.
- 3Toss in cooled macaroni, bell pepper, onion, carrot, pineapple (w/juice), cabbage and garlic powder.
- 4Cover and refrigerate 1 hour, up to overnight. Serve with coconut and cherries, enjoy!
