Corn and Pepper Salad

  • (1 Tbsp.) canola oil
  • (1) poblano pepper, diced
  • (1 small) red bell pepper, diced
  • (2 cups) fresh corn kernels
  • (1 tsp.) chili powder
  • (1/2 tsp.) ground cumin
  • (1/4 tsp.) salt
  • (14 oz. can) hominy, rinsed

Corn and Pepper Salad

A warm corn and two pepper salad flavored with chili powder and cumin.

  1. 1Place a large, nonstick skillet over medium-high heat. Add oil. When hot, add pablano pepper, bell pepper and corn. Cook 3-5 minutes, stirring once or twice.

  2. 2Add chili powder, cumin and salt, stir. Add hominy, stir and cook another 2 minutes. Serve and enjoy!
