Dressed Chicken Salad

  • (3/4 cup) oil-and-vinegar salad dressing
  • (4) boneless chicken thighs or breast halves, (1-1 1/2 lb.)
  • (1 1/2 cups) plum tomatoes, diced
  • (1 large) red onion, sliced 1/4-inch thick (do not separate rings)
  • (10 oz. bag) mixed salad greens
  • (1/2) English cucumber, cut in half lengthwise and thinly sliced

Dressed Chicken Salad

Boneless chicken thighs marinated in oil-and-vinegar dressing then grilled with thick red onion slices and served over salad greens.

  1. 1Place chicken in a shallow dish. Pour dressing over top, toss to coat and set aside to marinate for 15 minutes.
  2. 2Preheat indoor grill pan or outdoor grill. Grease onion slices with cooking spray, place on grill and cook 4-5 minutes per side, or until tender.

  3. 3Remove from heat. Add chicken to grill, cook 10-12 minutes, turning once. In a large bowl, toss salad greens and cucumber. Portion out, top each salad with sliced chicken, onion and dressing.
