A simple rye berry salad with reconstituted currants, fresh herbs and an orange dressing.

Instructions
1Place a medium saucepan over High heat. Add water and rye berries. When boiling, cover, reduce heat and simmer 1 hour.
2Meanwhile, in a small bowl, mix together hot water and currants, set aside 30 minutes.
3In a large bowl, whisk together 1/2 tsp. salt, shallots, orange rind and juice and vinegar. After 5
minutes, whisk in oil.
4Drain rye berries and currants after their respective cooking times and place them in the bowl with the celery, parsley, 1/2 tsp. salt and pepper. Toss to combine and serve.
