Ingredients:
  • (2 cups) fresh broccoli florets, coarsely chopped
  • (1 cup) fresh cauliflowerets, coarsely chopped
  • (2 medium) carrots, chopped
  • (1/2 cup) dried cranberries
  • (1 medium) red apple, chopped
  • (1 medium) Granny Smith apple, chopped
  • (2 Tbsp.) lemon juice, divided
  • (1/2 cup) mayonnaise
  • (2 Tbsp.) maple syrup
  • (1 lb.) sliced maple-flavored bacon, cooked and crumbled
  • (1/2 cup) sunflower kernels

Maple Broccoli and Apple Salad

A sweet and savory broccoli salad with more veggies, dried cranberries, maple bacon and sunflower seeds for some crunch.

    Instructions

  1. 1In a large bowl, toss apples with lemon juice. Add broccoli, cauliflower, carrots and cranberries.
  2. 2Whisk together mayonnaise, syrup and 1 Tbsp. lemon juice. Pour over vegetables, cover and refrigerate at least 1 hour.
  3. 3Add bacon and sunflower seeds, toss and serve.
