  • (1 cup) uncooked bulgur
  • (1 cup) boiling water
  • (1 1/2 cups) nectarines, thinly sliced
  • (1/2 cup) green onions, thinly sliced
  • 1/4 cup) fresh flat-leaf parsley, chopped
  • (1 Tbsp.) fresh dill, chopped
  • (3 Tbsp.) extra-virgin olive oil
  • (3 Tbsp.) white balsamic vinegar
  • (3/4 tsp.) salt
  • (1/4 tsp.) freshly ground black pepper
  • (3 Tbsp.) pistachios, chopped

Balsamic Herb Bulgur Salad

An easy vegan salad with bulgur, nectarines, herbs and pistachios in a simple balsamic dressing.

    Instructions

  1. 1In a large bowl, cover bulgur with boiling water. Cover and set aside 1 hour.
  2. 2When cool, toss remaining ingredients (through pepper) with bulgur, add pistachios and serve.
