  • (8 oz.) uncooked seashell pasta
  • (1 cup) frozen green peas
  • (1/4 cup) organic canola mayonnaise
  • (1/4 cup) fat-free buttermilk
  • (1 Tbsp.) fresh chives, minced
  • (1 tsp.) fresh thyme, chopped
  • (1/2 tsp.) salt
  • (1/2 tsp.) freshly ground black pepper
  • (2 cloves) garlic, minced
  • (2 cups) loosely packed baby arugula
  • 1 tsp.) olive oil
  • (2 oz.) finely chopped prosciutto

Buttermilk Shells w/Arugula

A creamy shell pasta salad with green peas, crispy prosciutto and peppery arugula.

  1. 1Cook pasta by following package directions. At the last 2 minutes, add peas. Drain and place under cold running water until cooled. Drain again.

  2. 2Meanwhile, stir together mayonnaise, buttermilk, chives, thyme, salt, pepper and garlic in a large bowl. Place a small skillet over medium-high heat. Add oil. When hot, add prosciutto and saute 2 minutes. Drain.

  3. 3Toss pasta and arugula with dressing. Top each serving with 1 Tbsp. prosciutto and enjoy.
