Lentil and Pepper Salad
An easy to make lentil salad that is healthy and high in protein.
Preparation Time

About 30 minutes
Instructions
1Using a strainer, rinse lentils thoroughly under cold running water.
2Bring 6 cups of water to a boil over high heat. Once it is boiling, add the lentils. When it returns to a boil, lower heat to medium and simmer for about 30 minutes.
3Drain lentils, then mix all ingredients together in a large bowl and serve.
