Red Pepper Tuna Noodle Salad

  • (6 oz. can) chunk light tuna in water, drained
  • (7 oz. jar) roasted red peppers, rinsed and sliced (2/3 cup), divided
  • (1/2 cup) red onion or scallions, finely chopped
  • (2 Tbsp.) capers, rinsed and coarsely chopped if needed
  • (2 Tbsp.) nonfat plain yogurt
  • (2 Tbsp.) fresh basil, chopped
  • (1 Tbsp.) extra-virgin olive oil
  • (1 1/2 tsp.) lemon juice
  • (1 small clove) garlic, crushed and peeled
  • (1/8 tsp.) salt
  • Freshly ground pepper
  • (6 oz.) whole-wheat penne or rigatoni (1 3/4 cups)

Red Pepper Tuna Noodle Salad

  1. 1Fill a large pot with 2 quarts cold water, place over high heat to boil.
  2. 2In a large bowl, combine tuna, 1/2 cup peppers, onion and capers. In a food processor or blender, add yogurt, basil, oil, lemon juice, garlic, salt, black pepper and rest of peppers. Process until smooth.

  3. 3Once water boils, add pasta. Cook 10-14 minutes or according to package directions. Drain, place under cold running water until completely cool. Toss with tuna and yogurt mixtures, serve.
