Red Pepper Tuna Noodle Salad
Whole-wheat penne with tuna and roasted red peppers in a creamy red pepper dressing.

Instructions
1Fill a large pot with 2 quarts cold water, place over high heat to boil.
2In a large bowl, combine tuna, 1/2 cup peppers, onion and capers. In a food processor or blender, add yogurt, basil, oil, lemon juice, garlic, salt, black pepper and rest of
peppers. Process until smooth.
3Once water boils, add pasta. Cook 10-14 minutes or according to package directions. Drain, place under cold running water until completely cool. Toss with tuna and yogurt
mixtures, serve.
