  • (1 1/2 cups) pearl barley
  • (3 Tbsp.) fresh lemon juice
  • (2 Tbsp.) olive oil
  • (1/4 tsp.) salt
  • (1/4 tsp.) freshly ground black pepper
  • (1 clove) garlic, minced
  • (1 cup) fresh corn kernels
  • (1 cup) plum tomato, seeded and diced
  • (1/2 cup) green onions, chopped
  • (1/4 cup) fresh flat-leaf parsley, chopped
  • (20) kalamata olives, pitted and coarsely chopped
  • (3/4 cup) crumbled feta cheese

Barley and Olive Salad

This delicious salad features a medley of barley, vegetables, salty olives and feta cheese in a simple lemon oil dressing.

  1. 1Follow directions on package to cook barley, omitting the salt. Drain and place under cold running water until cool, drain again.
  2. 2In a large bowl, whisk together lemon juice, olive oil, salt, pepper and garlic. Toss in barley, corn, tomato, green onions, parsley and olives. Add cheese and serve.
