  • (3 cups) cooked chicken breast, cubed
  • (2 cups) tart apples, chopped
  • (3/4 cup) celery, chopped
  • (1/4 cup) green onions, sliced
  • (1/4 cup) chopped pecans
  • (1/2 cup) fat-free reduced-sugar vanilla yogurt
  • (1/4 cup) reduced-fat mayonnaise
  • (1/2 tsp.) curry powder
  • (1/4 tsp.) salt
  • (1 medium) cantaloupe
  • (6) lettuce leaves

Chicken Apple Salad over Cantaloupes

A creamy and chunky chicken salad served on cantaloupe rings with lettuce leaves.

    Instructions

  1. 1In a large bowl, whisk together yogurt, mayonnaise, curry and salt. Toss in chicken, apples, celery, onions and pecans. Cover and refrigerate 2 hours.

  2. 2Cut cantaloupe into 6 rings, cut off the rind. Serve 1 lettuce leaf topped with 1 slice cantaloupe and chicken salad.
