Bacon Salad w/Tomato Dressing

  • (1 cup) whole-wheat country bread, cubed
  • (2 tsp.) extra-virgin olive oil
  • (4 medium) tomatoes, divided
  • (3 Tbsp.) reduced-fat mayonnaise
  • (2 Tbsp.) chives or scallion greens, minced
  • (2 tsp.) distilled white vinegar
  • (1/4 tsp.) garlic powder
  • Freshly ground pepper, to taste
  • (5 cups) chopped hearts of romaine lettuce
  • (3 slices) center-cut bacon, cooked and crumbled

Bacon Salad w/Tomato Dressing

Fresh tomatoes tossed with romaine lettuce, homemade croutons and crumbled bacon, all in a creamy tomato dressing.

  1. 1Preheat oven to 350°F. Place bread cubes on a baking sheet, drizzle with olive oil and toss. Bake 15-20 minutes, turning once.
  2. 2Halve one tomato and grate both halves over a bowl, avoiding the skin. Whisk with mayonnaise, chives, vinegar, garlic powder and pepper.
  3. 3Roughly chop the other 3 tomatoes. Toss tomatoes, romaine lettuce and croutons with dressing. Add bacon and serve.
