Blood Orange Salmon Salad

  • (2 6-oz. fillets) salmon
  • (1/2 tsp.) salt
  • (1/4 tsp.) freshly ground black pepper
  • (1 large) Vidalia or other sweet onion, cut into 1/2 in. thick slices
  • (1/3 cup) blood orange juice
  • (1 Tbsp.) shallots, minced
  • (2 Tbsp.) honey
  • (1 Tbsp.) olive oil
  • (1 tsp.) Dijon mustard
  • (1/8 tsp.) salt
  • (1/8 tsp.) freshly ground black pepper
  • (8 cups) mixed baby salad greens
  • (24 oz. jar) red grapefruit sections, drained

Blood Orange Salmon Salad

Grilled salmon and onions cut into chunks and served over mixed greens with a flavorful blood orange dressing.

  1. 1Spray grill with cooking spray, preheat to medium-high.
  2. 2Season both sides of salmon with salt and pepper. Spray salmon and onion with cooking spray, grill 10 minutes, flipping once.
  3. 3Meanwhile, in a large bowl whisk together orange juice, shallots, honey, olive oil, mustard, salt and pepper.
  4. 4Cut salmon and onion into large chunks. Toss greens with dressing, grapefruit, onion and salmon, serve.
