Walnut Caramel Brownies

  • (4 oz.) unsweetened chocolate, chopped and melted
  • (3) egg whites, lightly beaten
  • (1 cup) sugar
  • (2 jars) prune baby food (2 1/2 oz. each)
  • (1 tsp.) vanilla extract
  • (1/2 cup) all-purpose flour
  • (1/2 tsp.) salt
  • (1/4 cup) chopped walnuts
  • (6 Tbsp.) fat-free caramel ice cream topping
  • (9 Tbsp.) reduced fat-whipped topping

  1. 1Preheat oven to 350°F. Spray an 8x8 in. pan with cooking spray.
  2. 2Use an electric mixer to beat together egg whites and sugar. Beat in prunes, vanilla and melted chocolate. In a small bowl, combine flour and salt. While beating, gradually add to egg white mixture.

  3. 3Pour into greased pan, top with walnuts and bake 30-32 minutes. Cool on a wire rack. Drizzle caramel on top. Serve each piece with a dollop of whipped cream.
