Pumpkin Pie w/Homemade Whipped Cream

  • (3/4 cup) packed brown sugar
  • (1 3/4 tsp.) pumpkin pie spice
  • (1/4 tsp.) salt
  • (12 oz. can) evaporated low-fat milk
  • (2 large) egg whites
  • (1 large) egg
  • (15 oz. can) unsweetened pumpkin
  • (1/2 15-oz. package) refrigerated pie dough
  • (1/4 cup) whipping cream
  • (1 Tbsp.) amaretto
  • (2 tsp.) powdered sugar

Pumpkin Pie w/Homemade Whipped Cream

A traditional spiced pumpkin pie with homemade amaretto whipped cream.

  1. 1Position oven rack to lowest position and preheat the oven to 425°F. Spray a 9 in. pie plate with cooking spray and place it on a baking sheet.

  2. 2Roll dough out into an 11 in. circle, place in pie pan, trim excess and and crimp edges.
  3. 3In a large bowl, whisk together brown sugar, pumpkin spice salt, evaporated milk, egg whites, egg and pumpkin. Pour into crust and bake 10 minutes.

  4. 4Lower to 350°F and bake another 50 minutes. Cool on wire rack.
  5. 5Meanwhile, use an electric mixer on High to beat whipping cream until it forms stiff peaks. Beat in amaretto and powdered sugar. Serve each piece with a dollop of whipped cream.
