A refreshing citrus papaya sorbet made with coconut milk.

Instructions
1Place a sheet of parchment paper on a large baking sheet. Place papaya on baking sheet in a single layer and put in freezer overnight.
2Place a small saucepan over High heat. Add water and sugar, stir until boiling. Pour into a glass bowl and set aside 15 minutes. At this time, take papaya out of the freezer to defrost for 15 minutes.
3In a food processor, add half of papaya, half of syrup, 2 Tbsp. coconut milk, 1 Tbsp. lime juice, 1/2 tsp. lime zest and a pinch of salt. Puree until smooth, pour into a large bowl.
4Repeat with other half of ingredients and serve.
