Ingredients:
  • (1/2 cup plus 3 Tbsp.) unsweetened cocoa
  • (1/2 cup) boiling water
  • (2 cups) sifted cake flour
  • (1 tsp.) baking soda
  • (1/2 tsp.) salt
  • (1 1/2 cups) granulated sugar
  • (1/3 cup) vegetable shortening
  • (2 1/2 tsp.) vanilla extract, divided
  • (2 large) eggs
  • (1 cup) low-fat buttermilk
  • (1 1/2 cups) sifted powdered sugar
  • (2 Tbsp.) 1% low-fat milk
  • (1 tsp.) butter, softened

Double Chocolate Cake

A moist chocolate cake with homemade chocolate frosting.

    Instructions

  1. 1Preheat oven to 350°F. Spray a 13 x 9 in. baking pan with cooking spray.
  2. 2In a small bowl, dissolve 1/2 cup cocoa in boiling water, set aside to cool. In a separate medium bowl, stir together flour, baking soda and salt, set aside.

  3. 3Use an electric mixer on medium to cream together granulated sugar, shortening and 2 tsp. vanilla. Add one egg at a time, beat until combined. Add cocoa mixture, beat until combined.

  4. 4Alternately add flour and buttermilk, beat well after each addition. (Be sure to start and end with flour).
  5. 5Pour batter into greased baking pan, bake 30 minutes or until toothpick inserted in center comes out clean. Leave in pan and cool 10 minutes on a wire rack.

  6. 6Meanwhile, whisk together powdered sugar and remaining 3 Tbsp. cocoa. Add milk, butter and remaining 1/2 tsp. vanilla, whisk until smooth. Spread over cake and serve.
