Blueberry Peach Cobbler

Ingredients:
  • (3 Tbsp.) unsalted butter
  • (3 Tbsp.) canola oil
  • (1 cup) whole-wheat flour
  • (1 1/2 tsp.) baking powder
  • (1/2 tsp.) salt
  • (1 cup) reduced-fat milk
  • (1/2 cup) sugar
  • (1 tsp.) vanilla extract
  • (3) peaches, ripe but firm, pitted, sliced into eighths (or 3 1/2 cups frozen)
  • (2 cups) fresh or frozen blueberries

Blueberry Peach Cobbler

A sweet summer cobbler made with fresh peaches and blueberries.

    Instructions

  1. 1Preheat oven to 350°F.
  2. 2In a 9x13 in. baking pan, combine butter and oil. Heat 5-7 minutes.
  3. 3In a large bowl, mix together flour, baking powder and salt. Stir in milk, sugar, vanilla and melted butter. Pour back into pan and top with peaches and blueberries.

  4. 4Bake another 50-60 minutes, until browned. Cool on a wire rack 15 minutes and serve.
