Chocolate Fudge Cookies

  • (1 cup) semisweet chocolate chips, divided
  • (3 Tbsp.) canola oil
  • (1 cup) packed brown sugar
  • (3) egg whites
  • (2 Tbsp. plus 1 1/2 tsp.) light corn syrup
  • (1 Tbsp.) water
  • (2 1/2 tsp.) vanilla extract
  • (1 3/4 cups) all-purpose flour
  • (2/3 cup plus 1 Tbsp.) confectioners' sugar, divided
  • (1/3 cup) baking cocoa
  • (2 1/4 tsp.) baking powder
  • (1/8 tsp.) salt

Chocolate Fudge Cookies

Thick and fudgey chocolate chocolate-chip cookies sprinkled with powdered sugar.

  1. 1Preheat oven to 350°F. Spray 2 baking sheets with cooking spray. Place chocolate chips and oil in a microwave-safe bowl.
  2. 2Microwave on High 30 seconds, stir and continue to microwave 10 seconds at a time until melted. Transfer to a large bowl, set aside 5 minutes to cool.

  3. 3Stir in brown sugar, then mix in egg whites, corn syrup, water and vanilla. In a separate bowl, combine flour, 2/3 cup confectioners' sugar, cocoa, baking powder and salt.

  4. 4While beating, gradually add dry ingredients to egg white mixture until combined. Add rest of chocolate chips, stir to combine. Drop 1 Tbsp. for each cookie onto baking sheets, leaving 2 in. in-between each.

  5. 5Bake 8-10 minutes, or until set. Cool on pans 2 minutes, then transfer to wire racks to cool completely. Sprinkle with confectioners' sugar and serve.
