Almond Shortbread Rounds

Ingredients:
  • (2 cups) flour
  • (1 1/2 tsp.) ground cardamom
  • (1 tsp.) baking powder
  • (1/4 tsp.) salt
  • (1 cup) butter, softened
  • (2/3 cup) confectioners' sugar
  • (1/2 cup) blanched almonds, finely ground
  • (1/2 tsp.) vanilla extract
  • (2 tsp.) rose water

Almond Shortbread Rounds

Buttery and sweet shortbread cookies made with ground almonds.

    Instructions

  1. 1In a medium bowl, mix together flour, cardamom, baking powder and salt, set aside. In a large bowl, use an electric mixer on medium to beat together butter and sugar.

  2. 2Add almonds, vanilla and rose water, beat until combined. While beating on low, gradually add flour until combined. Place on a flat surface and form into a 1/2 in. thick rectangle.

  3. 3Wrap in plastic wrap and refrigerate 2 hours. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  4. 4Roll dough out until it is 1/4 in. thick. Cut out 2 in. rounds and place on prepared baking sheet. Bake 15-18 minutes, or until golden brown. Cool on wire racks and serve.
