Creamy Italian chocolate ice cream made with coconut milk.

Instructions
1In a medium bowl, whisk together cocoa and about 2/3 cup coconut milk, until it forms a paste. Add more milk if necessary. Add vanilla and stir; set aside.
2Place a medium saucepan over medium heat. Add rest of coconut milk, sugar, cornstarch and salt. Stir often until small bubbles form around the edges. Simmer 2-3 minutes, stirring the entire time.
3Whisk into cocoa, set aside to cool 45 minutes. Cover and refrigerate at least 3 hours.
4Freeze in an ice cream maker, following the directions for timing on the machine. Enjoy!
