1Place a large, nonreactive saucepan over medium-high heat. Add water, sugar, lemon zest, lemon juice and the cinnamon stick. Bring to a simmer, stirring so the sugar
dissolves.
2Add peaches, return to a simmer. Cover and simmer 20-25 minutes until tender, turning peaches every few minutes. Use a slotted spoon to place the peaches on a plate to
cool.
3Bring liquid to a boil and cook 10-12 minutes. Take off heat, add basil and set aside to cool.
4Skin peaches, place in plastic container. Strain syrup, pour over peaches and cover. Refrigerate at least 4 hours and serve.
