Blueberry Cheesecake Bars

Ingredients:
  • (2/3 cup) ground walnuts
  • (1/2 cup) graham cracker crumbs
  • (2 Tbsp. plus 1/3 cup) sugar, divided
  • (1/3 cup) old-fashioned oats
  • (3 Tbsp.) reduced-fat butter, melted
  • (8 oz. package) reduced-fat cream cheese
  • (1 Tbsp.) orange juice
  • (1/2 tsp.) vanilla extract
  • (1/2 cup) reduced-fat whipped topping
  • (2 Tbsp.) blueberry preserves
  • (1 1/2 cups) fresh blueberries

Blueberry Cheesecake Bars

Rich blueberry cheesecake filling over a walnut and oat graham cracker crust.

    Instructions

  1. 1Preheat oven to 350°F. Spray an 8x8 in. baking dish with cooking spray.
  2. 2Combine walnuts, cracker crumbs, 2 Tbsp. sugar, oats and butter in a small bowl. Press into an even layer in the bottom of the greased baking dish.

  3. 3Bake 9-11 minutes, or until light brown. Set aside on a wire rack to cool.
  4. 4In a large bowl, use an electric mixer to beat together cream cheese and 1/3 cup sugar. Add orange juice and vanilla, beat to combine. Add whipped topping, fold to combine. Pour over crust.

  5. 5Place preserves in a microwave-safe bowl and microwave on High 15-20 seconds. Add blueberries, stir and pour over cream cheese layer. Refrigerate until cooled and serve.
