Ingredients:
  • (1/2 cup) semisweet chocolate chips
  • (1/2 cup) unsalted butter or margarine
  • (3 large) eggs
  • (3 large) egg yolks
  • (22 1/2 oz. box) brownie mix, with chocolate syrup pouch
  • (1/2 cup) sprinkles, optional

Chocolate Lava Cupcakes

Chocolate brownie cupcakes with sprinkles drizzled with chocolate syrup.

    Instructions

  1. 1Preheat oven to 350°F. Spray a standard muffin pan with cooking spray.
  2. 2Place chocolate chips and butter in a medium microwave-safe bowl. Microwave on High 45-60 seconds, or until melted. Stir.
  3. 3In a large bowl, use an electric mixer to beat together eggs and egg yolks until foamy. With mixer running, gradually add dry brownie mix, then melted chocolate.

  4. 4Fill each muffin cup halfway with batter, sprinkle 1/2 tsp. sprinkles and evenly divide rest of brownie mixture over top.
  5. 5Bake 11-14 minutes. Cool 2 minutes. Drizzle chocolate syrup over top and serve.
